Chocolate Cherry Protein Bars

This is one of my older recipes. I'm talking before I was vegan 12 years ago! Crazy! I was so excited when I found this one buried under all my cookbooks. It's just as I remember. I did change it a bit so it's vegan and swapped out the flavors but it's absolutely delicious. Way better than store bought protein bars. And you get a sizable serving for 200 cals. I was pleased at the protein content too. 14g is perfect! Makes a great post workout snack or even a dessert! You can swap out the dried fruit and chocolate chunks for different flavor combos, mix it up with different flavored protein powders (LivBody Blueberry Crumble with dried blueberries would be amazing!! That's so my next flavor!), adding nuts would give it a wonder crunch, or maybe even cooca powder! So many possibilities once you have the base made. Ingredients:

1 cup LivBody Cake Batter (Use discount code: coachcassandraoc to save 20%)

1/2 cup oat bran

1/2 cup whole-wheat flour

1/4 cup wheat germ

1/2 tsp salt

1 (12.3oz) package silken tofu

1/2 cup unfiltered apple juice

1/2 cup packed dark brown sugar

3 tsp egg substitute mixed with 4 tbsp water (or 2 eggs if vegetarian)

1/3 cup peanut butter

1 cup chopped dried cherries

1/2 cup chopped unsweetened chocolate chunks

Canola oil spray


Method:

Line the bottom of a 13x9 inch glass baking dish with parchment paper and lightly coat with canola oil. Set aside. Preheat oven to 350 degrees.


In a large mixing bowl, combine the protein powder, oat bran, wheat flour, wheat germ, and salt. Set aside.


In a blender, mix tofu, apple juice, brown sugar, egg substitute, and peanut butter. Blend until smooth. Pour into the protein powder mix and stir until combined. Fold in dried cherries and chocolate chunks. Spread evenly into baking dish and bake in the oven for 35 minutes. Allow to cool completely and then cut into 12 pieces.
