Protein Ice Cream - Low Carb, Low Fat

Every once in a while, I stumble on a recipe that makes me stop and think: How is this even possible? This one feels like magic — a creamy, dreamy ice cream that’s actually healthy, packed with protein, and takes just a few minutes to make.

Yes… ice cream! 🍨


This treat has quickly become my new go-to when I want something sweet but don’t want to undo all my hard work in the gym. It’s cold, fluffy, and totally indulgent — yet it’s loaded with plant-based protein and keeps me full and satisfied. And the best part? It’s so simple, you’ll be making it on repeat!


The Recipe: Protein “Ice Cream”

Here’s all you need:

  • 2 cups (275g) ice

  • 1 scoop (35g) vanilla vegan protein powder - or another flavor

  • ¼ teaspoon xanthan gum (optional, but makes it extra creamy!)


⚠️ Important: You must use a high-speed blender or a good-quality food processor for this recipe — a regular blender won’t cut it.


How to Make It

  1. Add your ice to the blender. Blend until you get a shaved ice consistency.

  2. Add the protein powder and optional xanthan gum.

  3. Blend, blend, blend! This takes a few minutes — scrape the sides as you go. Add 1–2 tablespoons of water at a time to reach that perfect ice cream texture (but no more than 4 tablespoons).

  4. Scoop it into a bowl, add your favorite toppings, and enjoy!


Toppings Make It Fun 🎉

My favorite combo? A drizzle of peanut butter and a sprinkle of dark chocolate chips — just enough to add healthy fats (and let’s be real… peanut butter makes everything better).


You can also get creative with:

  • Fresh berries

  • Crushed nuts

  • A dusting of cinnamon

  • Coconut flakes
