Vegan Pumpkin Spice Bread - Fat Free!

Nothing brings in fall like the smell of this delicious quick bread! It's fat free by using apple sauce instead of oil but still perfectly moist. My kitchen always smells amazing and it makes my neighbors jealous. :) I add protein powder to increase the protein content and you won't even notice. It's another one of those "kid friendly healthy recipes" where I use regular granulated sugar but I also cut 1/3 of the total flour and add protein powder instead. If I make too many changes, my kiddos won't like it plus it's all about that balance between healthy and enjoyment. Vegans, non-vegans, kids, adults, everyone will enjoy this one!





Ingredients:

3 tbsp ground flaxseed

1/2 cup water

2 cups granulated sugar

1 1/2 cups unsweetened applesauce

14 oz can pumpkin puree

2 cups all-purpose flour

1 tsp ground cloves

1 tsp ground cinnamon

1 tsp ground nutmeg

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt


Method:

Preheat oven to 350. Lightly grease 2 loaf pans.


In a small food processor, whip flaxseed with water until thick and creamy.


In a large bowl, stir together the sugar, applesauce, pumpkin puree, and flaxseed mixture.


In a medium size bowl, stir together the flour, cloves, cinnamon, nutmeg, baking soda, baking powder, and salt. Thoroughly combine the dry ingredients, then add them to the wet. Stir until just combined.


Spoon the batter into 2 prepped pans and bake for 55-60 minutes or until a toothpick comes out clean. Let the breads cool for at least 20 minutes before removing from pans.
