Brownies are delicious but boy are they filled with fat, sugar, and lack in the protein department. These brownies are the opposite of that. They are packed with protein, low in fat and I swap out the sugar for stevia. Because they still have chocolate chips in them, I don't feel like I'm missing out on anything. My girls even love them! That's a double win. You get a great serving size and they are only 124 calories. Win!! This recipe comes from Fit Vegan Chef. Ingredients:
20oz soy milk or milk of choice
113g applesauce
24g flax meal
1 tbsp vanilla extract
200g LIVBody chocolate peanut butter protein powder (LIVBody discount code: coachcassandraoc)
24g Stevia
90g oat flour
40g powdered peanut butter
40g cocoa powder
30g cornstarch
1 tsp salt
1 tsp baking soda
90g chocolate chips (I used half chocolate and 1/2 peanut butter chips)
Method:
Preheat oven to 350 and line a 9x13 glass dish with parchment paper.
In a small bowl combine wet ingredients and set aside. In a large bowl, combine dry ingredients. Mix the wet into the dry until you get a batter consistency. Adding more milk if needed.
Pour batter into prepared dish and top with chocolate chips and bake for 35-40 minutes. Cool completely before cutting into 18 pieces.
