Grilled Zucchini & Hummus Wrap

This is my all time favorite lunch when I haven't meal prepped. It's quick and easy and doesn't require a lot of ingredients. Simply make sure you have pita bread, zucchini, hummus and bell peppers and you got yourself an easy delicious meal. You could probably pack this one and bring it with you to work as well! Just pre-cook the zucchini and pack everything you want heated in one container, grab one of those single serving hummus containers, and then put it all together at lunchtime! Well balanced macros that will keep you energized and satisfied for the rest of your day.


Ingredients:

1 zucchini 1/2 inch sliced lengthwise

2 1/2 tbsp hummus of choice

1 large whole wheat pita bread

1/4 red bell pepper, julienned

salt & pepper to taste

2 tbsp almonds, chopped

Sprinkle of cumin to taste

Sprinkle of sesame seeds

1 sprig fresh mint leaves


Method:

Heat non-stick griddle pan over medium heat. Grill zucchini for 2-3 minutes each side until charred and tender.


Spread hummus on pita bread.


Add bell pepper, grilled zucchini, and season with salt & pepper. Sprinkle chopped almonds, cumin and sprinkle with sesame seeds.


Top with fresh mint and serve!
