Looking for something fresh, light and healthy? This garbanzo bean salad is perfect! It's my go-to for BBQ's and potlucks and everyone gobbles it up! Best part, there's nothing fake, nothing weird, and super cheap and easy to make. Plus, you make it ahead of time so no stress right before the event or meal.
Ingredients:
1 15oz can garbanzo beans, drained and rinsed
1 cup diced tomatoes
1 cup peeled and diced cucumbers
1/2 cup radish, sliced
1/3 cup diced green bell pepper
1/3 cup parsley chopped
1/3 cup chopped green onion - light and dark green parts
1 large clove garlic, minced
1 teaspoon salt
4 tablespoons lemon juice
3 teaspoons extra-virgin olive oil
Method:
Combine the vegetables, beans, onion, and parsley in a bowl.
In a small bowl, combine the garlic, salt, juice and oil. Mix to thoroughly combine.
About an hour before serving, toss vegetables with dressing and refrigerate.
