Protein-Packed Vegan Chocolate Mug Cake


Ingredients

  • 1/3 cup oat flour or buckwheat flour (40g)

  • 1/4 cup vital wheat gluten (30g)

  • 1 tbsp cocoa powder or carob powder

  • 2 tsp stevia or sweetener of choice

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/8 tsp salt

  • 1/2 cup unsweetened apple sauce (4oz)

  • 1/3 cup water (2.6oz)

  • 1 tsp apple cider vinegar


Directions

  1. In a microwave-safe bowl, add oat flour, vital wheat gluten, cocoa, stevia, baking powder, baking soda, and salt. Mix until well combined.

  2. Add the apple sauce, water, and apple cider vinegar to the dry ingredients. Mix until well combined, or until achieving a cake batter consistency.

  3. If you'd like to serve it in a mug, fill a microwave-safe mug no more than 1/2 full of batter. (I usually use 2 mugs). Or you can keep it in the bowl. Choice is yours!

  4. Microwave for about 3 minutes in 1-minute intervals. Check every minute until the batter has firmed up and cake is pulling from the edges of the bowl or mug.

  5. Top with your favorite toppings and enjoy!
