Hash browns are typically greasy and high in fat and contain little to no protein. Well not these ones!! They are mixed with grated tofu and you'll never notice it's there. Promise! My mom doesn't like tofu and I made these for her and she loved it! The macros are nicely balanced so you won't feel guilty and it's a pretty decent size serving so you'll be nice and full. You could totally swap a russet potato for the sweet potato if you aren't a fan of sweet potatoes but I have not tried it so let me know how it goes!
Ingredients:
9oz sweet potato peeled and grated
7oz firm tofu pressed and grated
3 scallions, thinly sliced
1/4 bunch fresh cilantro chopped
1/4 cup cornstarch
1 1/2 tsp ground cumin
salt & pepper to taste
1 tsp coconut oil
1 1/2 tbsp hummus
1/2 oz baby spinach
Method:
In a large bowl, mix together sweet potato, tofu, scallion, cilantro, cornstarch, cumin, salt, and pepper. Form into 6 patties.
Heat oil in a non-stick pan over medium-high heat. Cook patties 2-4 minutes each side pressing down with spatula as they cook. Flip and cook on other side.
Divide between 2 plates and serve with hummus and baby spinach.
