Protein Powder Pudding

This delicious creamy pudding is a great way to add extra protein to your day. At less than 200 calories, it makes a great snack! It's versatile enough that you can tinker with the recipe by making chocolate or perhaps something different like chocolate peanut butter or strawberry milkshake. Yum! I used soy milk in mine but you can use a low fat cows milk should that interest you. Give it a try!




Ingredients:

2 scoops Vanilla or Chocolate protein powder

1 tbsp cocoa powder - if making chocolate

1 tbsp vanilla extract - if making vanilla

1 tbsp nutritional yeast flakes

16 oz soy milk - or milk of choice

3 tbsp maple syrup

1/8 tsp salt

4 tbsp arrowroot powder


Method:

To a blender, add protein powder, cocoa powder or vanilla extract, yeast, milk, maple syrup, and salt. Blend well.

Add 1 cup of mixture to a medium bowl and stir in arrowroot powder.

Add remainder of mixture to a pot set on medium head. Once mixture is starting to bubble, add arrowroot mixture. Reduce heat to low and stir constantly until thickened. Remove from heat.

Pour into 4 bowls, cover with plastic wrap, and refrigerate for 4 hours.
